    We have been here several times and as always it was great. I had the chicken flautas, they we're almost as good as my mother-in-law's used to be. The silver coin margaritas are amazing. I will always stop here when in the Denver area

    I had the chorizo lunch burrito here. It was a little bland and nothing to return back for. I'll keep looking around CR for a better Mexican restaurant. The salsa is also a little weak IMO. I recently moved here from Oklahoma/Texas - and even the weakest Mexican restaurants in my rotation there are better than this place. Not sure if I'll ever return.

    Second visit not nearly as good as the first. Menu says 2 for 1 happy hour on margaritas after 8pm, but this is only on minis, not the one you get when you order the "house margarita." Why the trickery? Margarita just average, nothing special. Food the same. Server said his favorite was the burrito Loco so I ordered it. It certainly wasn't "smothered" with green chili and cheese as the menu stated. The green chili was virtually nonexistent and had no heat what so ever. Disappointed. The size was good and chicken was quality. A healthy dish in my opinion, if you eat half. Ruce, beans, chicken, cheese, lettuce, traces of tomato, guac, and sour cream. (Chipotle better). My husband had duo of cheese enchiladas and soft relleno. Relleno I didn't prefer, too much egg taste and no heat. The enchilada was tasty and the sauce was different and intriguing (hint of cumin, perhaps?). Will we ever go back? Meh, probably not.

    It's decent Mexican food. Atmosphere is great and staff is fast and friendly. Food is a tad bland but they serve it fresh and hot. I go when it's a group of us meeting from all sides of castle rock.

    This Mexican joint is very tasty. The place is clean, the staff friendly and attentive, and the decor festive. I think the tamales have a little too much masa for the amount of filling but the enchiladas, beef tacos, and tacos al pastor are great. The rice and beans are also quite good. The fried ice cream is a little much with the whip cream and chocolate sauce but I guess they thought I was 10. I'm looking forward to trying the sopapillas next time.

    I have been coming to Guadalajara sometimes weekly for the past 7yrs. It was my favorite Mexican food place..so it is with great sadness that i post this review. The pricing has changed, the atmosphere has changed, the food has changed and most importantly the service has suffered greatly. Sadly I think it is the last time I will go. We as consumers have choices where we spend our money and with the most recent experience I can no longer recommend it and I for one will be spending my money elsewhere.

    After shopping at the outlet malls, my grandma and I were in the mood for some mexican food. My forst impression of this place was on tje phone. I called and asked if they had vegetarian options and they right away said yes they had many. That right away made me excited! When we arrived the decor was colorful and bright. They seated us right away and brought out salsa and chips. The salsa was a tad spicy, but I still chowed down. The menu had roughly ten or more plates that had specific vegetarian dishes and many more that you could modify. They had a nice and cheap selection of decent wine, not Barefoot or Sutter Home! Ordered the Cabernet Sauvignon (Some winery from Napa, yes I asked to see the bottle) and it was very tasty. For food my grandma ordered the Mexican Pizza from the appetizer menu, which I may add was huge! I did not try it because of the meat, but she said it was awesome. I had the Veggie Fajitas which were awesome! It came with a lot of veggies and a nice amount of sides. The staff was extremely helpful and the service was very quick. They even kept their cool when dealing with an extremely difficult customer in the next booth from us. If you are in the area or even passing through then definitely check them out!

    It can be hard to find a great Mexican restaurant when you're in an unfamiliar place. They're all pretty similar, but not all of them go the extra mile in deliciousness. I have, as most of you have, had Mexican that was so mediocre it was worse than bad. Guadalajara isn't a mediocre restaurant! True, it's not the greatest, but it's a great price for better than average Mexican food, friendly, fast service, and colorful decor. Burritos are huge and filling. I get the cheese dip burrito, which is a regular burrito smothered in - you guessed it - their house made cheese dip. It's obviously just the standard mix of melted velveeta-type cheese (read: electric orange) and rotel, but there's nothing wrong with that! Boyfriend gets burrito al pastor, which he loves. My ONLY qualm is that the salsa is too spicy for me. I remedy this by dipping the chips in the runoff cheese dip from my burrito. And boyfriend loves spicy food, so it's perfect! Way to go, Guadalajara. See you tomorrow night.

    I suppose I'm a bit spoiled with Mexican food being from so cal, so I'm pretty picky when it comes to it...I got the chicken fajitas which were pretty good, the chips and salsa were just mediocre.

    Best Mexican food in Castle Rock. Great drinks, food and service. Looks a little cheesy from the outside and definitely colorful interior but the food and friendly staff is definitely worth it. Prices are reasonable for the amount of food you receive.

    Average mexican fare at average pricing. I had the carne asada which was a little overcooked but still tasted ok. My wife had a chimi with cheese and Im pretty sure she liked it. The servers spoke as much english as my cat, which wasnt very helpful at all. Id go again, but I wouldnt expect anything great.

    Meh is a good summary of the overall experience. The atmosphere is hit and miss: it appears to be clean. They even run a small electric sweeper at 6p.m. while diners are eating...not cool at all noise-wise, but the floor is clean. The decor is strange: there are chairs painted with a colorful Mexican motif and really fabulous metal sculptures outside the entrance, but the booths are upholstered in a fruit or floral tapestry pattern that reminds me of grandma's house...I guess the fabric was on sale someplace. We were seated within 20 feet of the front door, so I didn't see much at all. The service was OK: I was disappointed that we arrived at 5:45 and the server didn't indicate happy hour times. She brought us water, chips and salsa right after we got there, but didn't reappear until 6:04 when happy hour (3-6) was over. At that time when I inquired, she indicated they had a blue margarita special, which I tried. NO!! Very blue, very sweet, no discernible alcohol, and served in a daiquiri glass. I waited until we safely received our food to tell the server that the margarita was a no-go. I ended up getting the house margarita (they had at least 10 to choose from) which was pretty good: on the rocks, with salt in a margarita glass. The food: the chips and salsa were OK. Chips thin like I like, but so was the salsa, which I don't, but it had a nice kick. The entrees were...just no, no, no! I got the pollo (chicken) with poblano sauce (I can't recall the exact name of the dish) and it was barely 3oz of extremely thinly sliced chicken buried in a couple of cups of green sauce with lightly roasted (maybe) sliced strips of poblano peppers, served with a bit of Spanish rice and refried beans. He got the pollo with chipotle sauce, similar to mine...same plating. In my opinion, a very low value for the price. So, the best things about the restaurant are the funky, cool metal statues at the entrance...it goes downhill from there.

    My family really enjoys this place! They have a kids eat free day (i think Monday) and we have had great food and service every time we come. They make sure you have TONS of food and plenty to take home for a decent price. I would recommend this restaurant for sure.

    Fantastic, wonderful, delicious, and authentic food! Yum! They make menudo like my mom, the carne asada is spot on, tacos al carbon, everything is truly delicious! Great prices and friendly staff make the whole experience wonderful.

    Love, love love this place! Friendly, as well as prompt service. Have been going there for years with family and friends. Some of our out of town guests always schedule in a meal when visiting. Favorites include: the best chili rellenos with green chili, shredded beef in anything is excellent, including burritos, and of course, don't forget the margaritas!

    Not a great atmosphere inside or out. Salsa was bad at the start. Menu is overwhelming and difficult to narrow down with minimal variations on the same item. My wife and I got burritos. Neither or us were impressed. A little pricy for the quality of food you get. If this is the best Mexican you can get in Castle Rock.... I weep for you.

    This place was surprisingly good. My husband ordered the two-burrito special and I had the chicken enchiladas. One of his burritos came out wrong (chorizo, not beef), but he ate half of it anyway. Still, they brought him a fresh one, correctly prepared, free of charge -- even though we just boxed it for later. I mean of course. That's just good business. Still, I was happy to see it. My enchiladas were tasty! Large portions, hot plates, good food. I would definitely go back, even though Mexican is not my favorite. They do it well here.

    Enchiladas Divorce ( divorced enchiladas) were terrible. Drowning in sauces so you can't even find the actual enchilada. The cream sauce on an enchilada filled with white cheese was just gross. White on white was a gross combo. Not sure what mystery meat was in the one they were calling "ground beef". Looked like hash? Shredded chicken could have been better if it wasn't drowning in green sauce that looked like baby vomit. I told waiter it was all bad, didn't even offer to bring me something else and still charged full price. Disappointing.

    Guadalajara's has inviting decor, friendly servers and a huge menu. I would describe the flavors as somewhat Tex-Mex meets homestyle Mexican cuisine. I usually order a combination plate because I can't decide on just one entree! The flavors of the individual items comprising the combination often end up muddled and a little lost in the copious amounts of cheese. On my last visit, the rellenos were overwhelmed by a heavy cheese flavor which drowned out the green chili flavor from the stuffed pepper and green chili sauce. I think I'll try their avocado tostado next visit and avoid all the heavy queso. Four stars for Guadalajara was a bit of a stretch because, IMHO, the flavor of the food is a little lost to cheese and not bold/spicy enough. Not an easy call because many of my friends really love the food here. I feel the peer pressure. :-) Regardless, this is one of the best choices in town for a sit down Mexican meal. I DEFINITELY recommend everyone in Castle Rock give Guadalajara's a try because it is one of the best options on the local scene for Mexican food and their margs and salsas are pretty darn tasty! So let your taste buds decide! I for one will be back to try more items on their extensive menu. :-)

    Visiting the Castle Rock area from the Pacific Northwest, there were two things I HAD to do while in Colorado: 1. Get some sun and, 2. Have Mexican food. Guadalajara's was great for fulfilling the second to do on my list and had the added bonus of friendly and fast service! We ordered some extra guacamole to go with the complimentary chips before our meals were served and it seemed nice and fresh. I ordered the Manuel Burrito because I don't like a lot of "extra" stuff on my Mexican food and it was pretty perfect for me -- meat, beans, and rice all in a huge tortilla and smothered in cheese. Out of our party of 4, everyone enjoyed their dishes. They do have a large menu so anyone who goes can probably find something they'd enjoy. If I weren't so stuffed from the burrito, I would have liked to try the sopapillas, but perhaps on another visit... Honestly, if this place were local for me, it would probably be a go-to to fulfill a Mexican-food craving! Oh, and the meal for 4 people was under $40 -- added bonus!

    This was a just-okay dinner for me. The vibe here is a little weird for LBGTQ members- I definitely got some stares. But, for the food: The chips were cold, the salsa was SPICY, but the fajitas were pretty tasty. And, I didn't mind at all the fact that my partner and I could share 1 dinner so it was an under $10 meal. My water never got below halfway empty and I felt full when I left. So who knows- I could go back or not...but I'll probably keep looking.

    I know I'm used to Tex-Mex, but this place was a little disappointing. The tamale was good, not great. The chicken tortilla soup was very disappointing. Strong tomato flavor and grilled chicken that tastes so heavily grilled it overwhelmed the soup. Service was excellent.

    So if you're looking for sloppy mexican and the nearby Santiago's is packed, Guadalajara's is your only other option on this side of the freeway in Castle Rock. Staff is friendly but a bit disorganized. We ordered from the lunch menu: bean tostado and beef enchilada plate; beef tostado and beef enchilada plate and a taco al carbon off the side menu. Our food arrived quickly, but instead of a bean tostada they made a bean enchilada. Huh? Too weird for school. Then they made me a beef tostada instead of the bean tostada. Okay. Kitchen mix-up fer sure.The whole plate, filled with bland refrieds, a tangy and sour coleslaw and even-more-bland rice was a predictable pile of mess. Too bland for my liking. At $7.50 a plate during lunch it's not a bad price, but I think the lack of taste isn't enough to bring me back here...

    Love this little gem in C. Rock! What's not to love here! The food is delicious, hot, and fresh. Diners can chose from a more Tex-Mex style, or they also offer traditional Mexican fare as well. Tasty margaritas, with many options, and a full bar offering other beverages. The services is prompt, friendly, and very attentive. It is family friendly with fun choices for the kids as well.

    Wow! Stayed at a nearby hotel while traveling and am so pleased with this food! Capachana was served hot or cold. It's snowy so we ordered hot. Delicious! Combo plate was excellent. I especially enjoyed the shredded beef enchilada and taco. Beans were good and service was very good. Will be back for sure!

    The food was OK. If I were to eat their food again it would have to be to go. The atmosphere is very loud and they don't seem to mind if kids are running rampant through the place. I get that it is a family restaurant but I don't really want little Suzie or Johnny stopping by my table.

    The service was outstanding and the quality of the food was the closest thing to authentic in Castle Rock and Colorado Springs. Strongly recommend the Chile Relleno Crujiente. My youngest daughters loved the fajitas even though the quantity of meat was about the right amount for an adult but for the kids to share was a stretch. Still, good service. Good good. Good ambiance. Definitely a place to come back to.

    The chicken mole verde was exceptional. The pumpkin seeds with Mexican spices were a perfect match. I asked for their sautéed vegetables instead of the beans and rice. Tamales are large with plenty of meat inside. Rellenos were too. Decent chile verde. Quality atmosphere and cordial staff.

    How often do you get GREAT food (the fajitas and the rellanos are excellent!!), GREAT service and good atmosphere all at once! We happened upon Guadalajara's on the way home from Denver and were pleasantly surprised. It's good enough to make a special trip to get there, and the staff really seems to appreciate your business.

    My wife and I go to Guadalajara's once a week. Ask for the Mushroom Salsa. Molcajete is delicious!!! The portions are very generous, always plenty leftovers for tomorrows lunch. The staff are always a treat.

    We have eaten here a number of times and believe they are one of the best Mexican restaurants in the region. We always eat here at least once when we are in the area. The tacos have not been greasy and there are some great choices in Burritos. The service has sometimes been hit and miss with regard to making sure drinks are refilled and also you can be really packed in at busy times.

    Their food is good, however, they refused to honor a coupon, that was not expired. They forgot to ring it up, and refused to re-ring the check to honor their promotion. Wow. I told them it would cost them me, as a customer. The owner shrugged and said, "We have plenty of customers". Ok, then. But the great news is, I went to Santiago's a half a block away out of spite....and it was the best spite I've ever tasted....and have been going there happily for a year, now. I have been collecting all my receipts from Santiago's, just to be able to present them to the owner with all the lost income, in a dramatic moment. Lack of customer service is my biggest pet peeve, especially when I feel it was a bait and switch to get me in the door.

    We love this place, they are friendly, have fast service, and the best salsa in town! We even take a tupperware from home and have them fill it with their fresh salsa to enjoy at home (small fee). A great place for kids/family. Funny thing, you can always hear one of the cooks whistling. While that may be annoying to some, it tells me he enjoys his work :)

    We have gone here since they opened and loved every meal. If there was ever an issue or something didn't come out to our expectations they immediately fixed it and have even adjusted our bill. I would say this is the best Mexican food in town.

    My family loves this place. They remember who you are and what you like and sometimes, depending on our waiter, our drinks will be on the way out before we're even seated. Very friendly service.     Yum! Guadalajara is a favorite with my family and the best Mexican food in Castle Rock. The service is always incredibly friendly and fast, no matter how busy or what time of day we visit. I've tried a lot of their menu items (all delicious) but my favorite by far is the Expresso Burrito. It's a pork green chili burrito with rice and beans, smothered in enchilada sauce and topped with sour cream and guacamole. It's so good! I even love the Expresso Vegetarian Burrito, which is basically the same without the pork. The hubby also loves their burritos, but also their combo plates which can give you a little taste of everything. Drinks are good, but it's the food that really brings us in here again & again.

    Friends recommended Guadalajara's because they love the Mexican Pizza. I'd seen the restaurant a few times, near the gas station, but after how awful Santiago's was, when we tried it on that side of town, I didn't know if I wanted to try anything at all. We went ahead and took a chance...and we were pleasantly surprised! The interior has nice cheerful Mexican decor, clean and the noise didn't carry. (We sat very close to a big group too.) The menu had a plethora of selections! It took awhile to choose. Our waitress was very good and helpful, as well. I was on a diet and needed mostly protein, no carbs - and they had a wonderful chicken special - with spinach and a green sauce - a perfect suggestion from the waitress. I can't recall what my hubby ordered, but he really enjoyed his meal too. Probably chile rellanos - his fav. And lots of tortilla chips and salsa! Good quality, good prices, nice ambiance, and pleasant and helpful service. We look forward to going back again and again - we both love Mexican food and glad we found Guadalajara's!

    The food was good. Service was adequate. One thing I like is that they use real ingredients, not frozen entrees that are simply reheated. They are not shy with the sauce and cheese like some of the other restaurants in town. My best Mexican food experience in Castle Rock!

    I love this place! The portions are generous, and the staff is very attentive. I went in for my birthday, and they surprised me with dessert. Since my family was over 2,000 miles away, this small gesture meant so much to me. I have gone back twice so far. This will certainly be a favorite for years to come!

    My family and I love this place! We are Southern California natives and miss the southwestern style of Mexican food (just say no to Tex-Mex). The carne asada is outstanding, and so are the enchiladas and menudo. The rice is a little dry and fluffy, but that's how my Nana (from Mexico) made it so I am in heaven. The refried beans are and tortillas are also as authentic as I've found in Colorado. The employees are always very friendly and ensure that drinks and chips are refilled before you have to ask for it. The décor is nothing fancy, but that's how a traditional Mexican food place should be. The focus is on hanging out and eating good food, and not on creating a trendy environment where prices are high for basic food staples like rice, beans, and cheese. In all, my family of five can eat well for $40 (2 adult meals, 3 kids meals). This is our favorite restaurant since we moved to Colorado over six years ago.

    Just finished having a late lunch here. Very friendly and attentive staff. Was disappointed that they don't have a bar since that's where my wife and I like to eat. No draft beer either. The waiter apologized about the beer. I told him it was no big deal and ordered a bottle of Dos Equis Lager. My wife ordered the Cadillac Margarita. She thought the margarita was so-so. Her second margarita was called The Gold Margarita I think. She felt that was much better. I ordered Burrito Al Pastor and it was excellent! I noticed on the menu that they will make it spicy if desired. I asked if they could make it hot and they obliged. The waiter said they put some kind of habanero sauce in it. It was good and spicy but that's the way I like it. I had worked up a sweat by the time I finished. My wife had the Espresso Burrito. She liked her's too but felt that mine was better. Both burritos were massive and I'll probably skip dinner tonight. The food was great and so was the service. I would definitely go back. Ibex

    I was pleasantly surprised by this little joint. My Tex-Mex-loving wife and I dined there and found it totally delightful. Not just from the Cadillac Margaritas, either, which were tasty but quite potent. She tried a number 21, which comprised a cheese enchilada, a tamale, and a beef taco. Each item was delicious. The masa in the tamale was properly seasoned (a pet peeve of mine) and the beef taco and enchilada were tasty and tender. I may not get out much, but I have never been given the schoice of a "crispy" chile relleno. I opted for this out of curiosity, and found it it superb. I also got a carne asada taco on the side, and I found the meat full of flavor. The side dishes included a mound of slaw which was excellent, as we're the beans and rice. The guacamole was a bit mayonnaisey for my taste, but not horrid. I went here because my wife wanted to try the mushroom salsa. I loved it, though she got surprised by a hot bite or two. The hot and mild salsas served with the obligatory chips were very tasty, and both were loaded with flavors. Service was great, and my 10 month old son gave his seal of approval. We will be back, so it may take awhile before we sample any other Mexican restaurants in the area! Oh, and whoever commented on this being a traditional Mexican restaurant, as opposed to Tex-Mex, well, I must beg to differ. And that is a compliment. One last note-this place is a little difficult to get into, as you can see the sign, but the maze of parking lots make it difficult. But it is worth the effort.

    Such a great staple in the Castle Rock area. It's cycled through a few renditions before becoming Guadalajara's but this is mid-range priced Mexican food that is solid, consistent and great for when you need a fix. The salsa and chips are accompanied by a mushroom ceviche that is absolutely to die for - be sure to ask for it. Fresh, full of lime fungus cilantro goodness, I could eat this with a spoon and be perfectly content. The main entrees aren't cutting edge but the ingredients are fresh and the menu is ENORMOUS. My go to is the Chicken Mole Enchiladas - again, nothing cutting edge but tasty and consistent.     Great food. Excellent service even though it seems all of Castle Rock was there at the time we were. We were seated almost immediately. We ate until we were overly stuffed, a rarity for us, and had enough take-home for at least one more meal...and we're a family of 6. i highly recommend Guadalajara's!

    This is definitely one of my favorite places for mexican. Casual atmosphere, very attentive staff, and some really great items on the menu. Dinner starts off with chips and homemade salsa - make sure and ask for the mushroom salsa with fresh cilantro (makes my mouth water!) Our favorite dinner item is the mocajete, big enough to share for sure. Also great fajitas and shrimp dishes, and good mole` sauce. Save room for dessert. There's one item that is a flan, surrounded by 5 soppapillas, two scoops of ice cream, whip cream and cherry - whew! Also big enough for the table to share. Whenever we want consistent delicious mexican food this is where we head.

    Excellent! I only ate here once, but the food was incredible. I ate the seafood soup, its broth was perfect and the seafood plentiful. The appetizers and beer selection were also pretty good.

    Good quality Mexican food in an old Sherris. How can you go wrong!? It isn't the best ever but it is better than most and definitely the best in Castle Rock. Please get the mushroom salsa. It sounds strange and not good at all but it is awesome and even mushroomphobes love it.

    This is my go to restaurant in the area for comfort Mexican food! Great food and margaritas, reasonable prices, comfortable atmosphere and friendly service. We've been going here for years and they always greet us like old friends. The Tacos Al Carbon are my favorite. The Mexican Pizza and Carne Asada are always good, too. When I'm watching my weight I'll order the tortilla soup~ it's pretty light and fresh. Glad to have them in Castle Rock!

    Good food. Kind of pricey for Mexican. Great selection of beers. The Margaritas are on the sickly sweet side. Try the tacos Mexico - char broiled steak chunks on soft corn tortillas, the fajitas are good too. Combinations are tasty heart attacks on a platter!

    Very good/fresh food. Big portions. We got the Fiesta Guadalajara and it was so good. The kids got the chicken strips/nuggets and they liked them OK. (typical chicken deep fried parts) The wait staff was very friendly and helpful with making choices. We WILL go back!

    First visit here and for the most part everything was good and service was decent. The Mexican food here was some of the best I've had and the soapillas were some of the best. Whats sad is such a good place doesn't make their own chips thus naming the great Queso and nachos not so good. I can always tell when chips come from Sysco or some other food distributor.

    I've been to this restaurant a number of times over the many years it's in business. Lately, the quality just leaves one wanting. It's still clean, the ownership and staff are very nice nut the food is suffering from it's old flair. I'll be back again to see if there's a change, but not sure if this will be one of my "places to go"

    I haven't found a great Mexican place yet so when I went here I was expecting it to be bad... I was WRONG!!! It was sooo good I went back the next night!!! Everything had awesome flavor and the chips and salsa were delicious too!! I changed my order a bit to a different cheese- they had no problem with it. You get a TON of food for the price. The staff is great and on top of everything. I hadn't been sitting down a minute before we had chips/salsa and drink orders taken. If any staff passed by and saw our drink below half empty they would ask if we would like a refill. The only thing I saw was the bathroom has a few leak problems but nothing that was disgusting...just some leaky water that needed to be repaired. It's kid friendly and TONS of families were there. It was delicious!!!!

    Definitely the best Mexican restaurant in Castle Rock. Their salsas are great. Every time they bring a different number of salsas to the table. Sometimes they just bring hot and mild. One time they brought 4 different typs including their cilantro and mushroom rough chopped pico. The servers are friendly and the service is quick. The food is as good or better than you'll get any any Mexican restaurant in the area. Give it a try, you'll like it!
